As we transition seasons, such an opportunity to explore Moroccan flavors is not to be missed. Our culinary adventure began with a delightful trio of salads. A refreshing green vegetable medley, a zesty fish-based salad, and an inventive dish featuring khus khus (poppy seeds) made for a delightful start. Then, we were warmed by Shorba ma Sherwja, a traditional Moroccan soup made with grilled chicken—perfect for the rainy weather. This hearty dish was deeply satisfying and precisely what one desires on a gloomy evening.

Next, we enjoyed a platter that featured fresh Hummus, creamy Labneh, and smoky Muhammara. This was complemented by both baked and fried pita bread, making the meal interactive. Tearing pieces of pita and pairing them with the luxurious spreads created a fun experience. Engrossed in conversation with Chef Raju, we savored every bite and lost track of time as the plate disappeared.

The highlight of the festival was undoubtedly the chicken infused with aromatic Moroccan spices—fabulously flavor-packed and an unmissable dish at the festival. We also indulged in juicy chicken and paneer shawarmas, alongside crispy falafels. The generous portions left our appetites satisfied, especially with flavors bold enough to impress even the pickiest eater. Just a small serving could make one feel full and fortunate.

Dessert was no less surprising. We sampled the beloved Baklava, moist and fragrant Basbousa, and Mahallabia, an exquisite milk pudding that ended our meal on a high note. Each sweet dish was well-balanced—not overly sugary, just enough to leave us with happy smiles.

Chef Amanna shared some insights about the festival, expressing, “Moroccan cuisine is a mosaic of Mediterranean freshness, Berber soul, and Arabic depth. We wanted to bring these bold and comforting flavors to Hyderabad and help people connect with the spirit of the cuisine. We also feature live food stations for guests to customize their dishes. My team and I have worked with care to curate this menu. It’s more than just a meal; it’s a celebration of food, family, and shared moments.” The festival runs every Saturday until June 28, making it a prime opportunity for food lovers.
